pesto!

Heather made a whole freaking bunch of delicious pesto from the basil in our own garden. We are currently short one Jen and one Erin, but we're hoping this will tempt them back to Poplar Ave.

La Cucaracha

Jen, we miss you. We miss your vitality, your directness, your ability to get shit done, and we don't mind being told what to do by you either. In fact it's very charming.

We also miss your fearlessness about squashing bugs. Namely cockroaches, of which we have spotted two (possibly three) in the last 2 days. Big, juicy, cockroaches the size of mice that make me jump onto chairs and screech like a 5-year old.

In other words, there will be work for you to do when you get back.

Recipe: Jen's Mexican Yumm Yumm

(jen, edit as you see fit)

  • spread some olive oil in the bottom of the pan
  • cover the bottom with corn tortillas, then add the following ingredients til you see fit:
  • sauteed bell peppers, onions, and chipotle peppers
  • black beans, drained but not rinsed ("although i'm sure you could do that if you wished")
  • spinach leaves
  • tomato slices
  • little bit of salt and cumin
  • cheese (jack, colby, cheddar okay)
  • enchilada sauce, canned
  • keep layering cheeses, other items as you see fit
  • top: raisins and almonds
  • fancy green spanish olives, if you're feeling sassy
  • can also add a little bit of cinnamon and clove

stick it in the oven at 350 for half an hour, then crank the oven up to 400 and put the dish back in for another 5-10 minutes. watch it, let it get crispy on top. you can also stick it in the freezer before you cook it and make it later, in the dead of winter when you need something delicious and healthy.

the earth is my mother

and I'm glad to live in a house with such level headed ladies. hippies they may not be, but they know where the ground is... for the most part. I'm so glad that our lovely "travels with myself" sam is home, and that I have someone to drink bourbon in moderation with. yes, I said moderation. we all have hopes and dreams, and I'm not letting go of mine goddammit.
here's to keeping my first public diary- that private one wasn't working out so well anyway.
